These are the easiest no bake protein balls on the internet that takes maximum 15 minutes to make. They are cost effective, are better for the environment (use no single use plastic packaging) and are quick and nourishing snack for the busy week that may lie ahead.

Makes approximately 22 balls
1/2 C unflavoured, unsweetened natural protein powder (rice, pea or whey etc)
3/4 desiccated coconut
1/4 C coconut butter, paste*
1 3/4 C almond meal
3 T coconut oil, melted
1/2 - 1 lemon zest
Juice of 1 lemon
3 T rice malt syrup
salt to taste
In a bowl add all of the ingredients and mix until evenly combined.
Once combined, use a spoon to scoop portions and form the dough into balls. Roll until smooth.
Store in a covered container in the fridge or freezer.
*Note: If coconut butter comes solid, gently heat until a paste consistency is reached. Be careful as it heats quickly and can burn and seize.
